5 Signs of a Cockroach Infestation in Your Restaurant

1. Droppings that look like ground pepper

2. A musty, oily odour

A heavy cockroach population gives off a distinctive musty, slightly oily smell. If a storage area or corner of the kitchen has an unexplained odour that lingers after cleaning, it’s worth investigating.

3. Egg cases (oothecae)

Cockroaches carry and deposit small, capsule-shaped egg cases, each holding dozens of eggs. Finding these — often tucked into cracks and crevices — means the population is actively breeding, and that the eggs are protected from many treatments. 4. Smear marks and shed skins

In humid areas, cockroaches leave irregular brown smear marks along their travel routes. As they grow, nymphs shed their skins, leaving behind translucent castings near harbourage zones.

Cockroaches are nocturnal and avoid light. Seeing one during the day usually means the hiding spots are already full — a sign of a substantial infestation, not a stray. One roach in daylight should be treated as a warning, not a one-off.
